Do all VoIP systems work on the same principle?

In terms on how they function such as registering IP phones to the FTP server, use DHCP IP addressing, ect..

Systems such as an Avaya and Asterisk are they similar with their IP process?

deep down, I couldn't tell you but as a general observation of the platforms I have looked at, yes the phones register to some form of signaling server that sets up the call and drops out once the path is complete. Same would go for calls to the PSTN via gateway. The call would be set up between the set and gateway and the signaling server would drop out.

As for DHCP, you could go either way. Fixed IP on sets or use the DHCP. I have not investigated but would assume both have their advantages and disadvantages.
