Math is a wonderful thing. Think of it this way:

If you choose 10, 11, 12, 13, 14, 15, 16, 17, 18 or 19, then you always end up with 9, so 9 gets a symbol.

If you choose 20, 21, 22, 23, 24, 25, 26, 27, 28 or 29 then you always end up with 18, so 18 gets the SAME symbol as 9

If you choose 30, 31, 32, 33, 34, 35, 36, 37, 38 or 39 then you always end up with 27, so 27 gets the SAME symbol as 9 and 18

etc. etc.

The thing that makes you wonder how they do it is that they keep changing what the shared symbol is. So if every time you pick a different 2-digit number, then every time you get a different numerical answer and thing "Hey, they just guessed my symbol!"
