Is there a way that a voice mail message left for a user can trigger a Remote Notification type message to be sent to e-mail rather than a pager or phone number?

Yes...you are looking for the "Remote Text Notificaiton" feature...it needs to be setup...check your NTP's for directions or call your vendor and ask them to set this up for you. This is a free feature, although the service call typically is not.
