I have a M3904 phone with a few single call non ringing extensions setup. I can see on my phone when one of the single call non ringing extensions is in use or when a new call is coming in. If one of the single call non ringing extensions is in use, is it possible to listen in on the conversation?

Short answer: No.

The only way to observe a person’s call is to put them into an ACD group. You would have to setup another phone, ACD as well and make that phone a SPV in the CLS.

This is the second question regarding listening to anther persons call.
What's up with that?

how about if you were to MADN the dn with a 500 port tn. Then I think the privacy would always be released.

POA Privacy Overide Allowed can be provisioned on the set. See the feature PRIVACY OVERRIDE in the Features and Services NTP:

A Meridian 1 proprietary telephone with a Privacy Override Allowed (POA) Class of Service can enter an established call on a multiple appearance single call Directory Number (DN). However, the call cannot be joined until it is established (that is, the EOD timer has expired).
