| You may be better off using the standard VoiceMail integration instead of IMS. The standard VoiceMail integration sends the VoiceMail message as a .wav attachment to an email template you can alter.
IMS sends the VoiceMail message embedded in the email with controls and it is probably these controls that are not being transferred out to the Mobile device due to the settings/policies established on the Exchange Server.
